I think Stan’s right — Banner’s knowledge of medicine and biology was self-taught as he attempted to find a cure for his condition. Hey, he’s a genius with a problem — he’s going to crack open a book or two.

Maybe he has learned a great deal about medicine since being turned into a monster a couple of years back (how many years in Marvel time I have no idea anymore). More likely though is that he is just another comic book super-scientist that is versed in every discipline known to man (plus a few that are not).
